During the ski season, I regularly fuel up with a coffee and house-made chewy granola square at Cloud Dine. Chef Alex was kind enough to share the recipe. These make the perfect snack when you are hiking and biking with just the right amount of sweet.
2 cups oats
1 cup sunflower seeds (or any combination of seeds)
1 cup sliced almonds (or any combination of nuts)
¼ cup wheat germ
¼ cup flax seed
1 cup honey (liquid cup)
½ cup brown sugar
2 ounces butter
2/3 tbs vanilla extract
1/3 tbs salt
1 cup dried fruit
Preheat Oven to 350F degrees
Mix oats, seeds, nuts, flax seed, and wheat germ. Toast at 350F degrees for 5 minutes.
Combine butter, honey, brown sugar, salt, and vanilla in pan. Melt on stove top until sugar is completely dissolved.
Mix the two together and spread on a greased 9 x 9 sheet pan lined with parchment paper. Bake at 350 for 15 minutes
Let cool in walk-in about 45 minutes.
Flip over onto another greased sheet pan and bake for an additional 5 minutes
Cool and cut into 12 squares
